Apple Cinnamon Granola Bars

Apple cinnamon granola bars are full of toasted almonds and rolled oats, paired with dried apples and sweet raisins. They are mouth-watering good, no-bake, gluten free, and packed with nutrition. Can it get any better? I love making this autumn-inspired treat for an easy breakfast side or a quick snack for the go.

Our apple trees have given us an amazing yield this year, which has been an absolute blessing. And one of the things we have really enjoyed making with them have been dried apple chips in the dehydrator. The kids have been snacking on them throughout the day and I’ve been having fun finding new ways to incorporate them into some of our favorite everyday recipes.

This recipe is inspired by Joanna Gaines’ Chewy Granola Bar recipe, but with an autumn spin using our abundance of dried apples. I hope you enjoy!

Tips for Making Gluten-Free Apple Cinnamon Granola Bars

  • If you are Celiac or have a gluten intolerance, make sure you use certified gluten-free oats as well as, almonds that have been processed in a gluten-free environment.
  • I find that thinly sliced almonds are the best for this recipe. Whole almonds or even chopped are a little too chunky. (Sliced almonds also toast beautifully.)
  • Line a pan with parchment paper. This makes removing and cutting the granola bars super easy!
  • You can store these apple cinnamon granola bars in the fridge or freezer.

Tips for Keeping the Granola Bars from Falling Apart

  • The honey, butter, and brown-sugar mixture is the “glue” that holds all the dried parts together. With that being said, its really important to throughly mix the wet and dry ingredients before pressing into the pan.
  • Once you have your pan lined with parchment paper, press the mixture down nice and tight. I like to use the back of my large flexible silicone spatula to push down the mixture before I put it in the fridge.
  • Since these are no-bake (other than toasting the nuts), I like to put the pan in the freezer for the first hour, but the fridge would work just fine as well.

  • Rolled Oats – You can use quick oats or whole.
  • Thinly Sliced Almonds – Sliced vs. whole or chopped will give you the best results.
  • Brown Sugar – I used Brown Sugar Swerve to cut down the glycemic index a bit, but regular brown sugar works great as well.
  • Dried Apples – Our apple trees have had a great year, so I’ve been making huge batches of apple chips in the dehydrator. I chopped these up for the dried apple component of this recipe, but you can easily purchase dried apples at a grocery store. (Or you can also purchase dried apple chips on Amazon.)

How to Make Apple Cinnamon Granola Bars

  1. Preheat oven to 325. On a baking sheet, toast the oatmeal and almonds in the oven until fragrant and slightly golden (about 10 mins).
  1. Meanwhile, in a pan over medium heat, add butter, honey, brown sugar, vanilla, and salt and bring to a simmer. Remove from heat.
  1. In a large bowl, mix the toasted oats and almonds with the honey mixture.
  1. Fold in the dried fruit.
  1. Press firmly into a 9 x 13-inch baking pan lined with parchment paper.
  1. Refrigerate or freeze for at least 2 hours to harden.
  1. Lift the parchment paper out of the pan and place it on a cutting board. Cut in squares and serve.

  • 2 cups oatmeal
  • 1 cup sliced almonds
  • 1 cup chopped dried apples

  • 1/2 cup honey

  • 3 TBS butter
  • 1 tsp vanilla
  • 1 pinch of salt
