Sage Sausage Sweet Potato and Apple Hash

There’s something so cozy and fall-like about a sizzling pan of hot sweet potato, sausage, and apple hash. Making a great breakfast skillet or an easy dinner side, this recipe is simple, tasty, filling, and healthy.

I first had a variation of this recipe years back when I was a new mom. I met up with a long-time friend at Starbucks. We were both gluten-free, which was still a novelty at that time, and she brought us a little breakfast to have alongside our coffees. To this day, I remember being surprised by the simplicity of the ingredients and thinking, I’ve got to get home and try this recipe!

Since then, I have added this to our repertoire of family recipes. I like to pull this one out when the mornings get gray and chilly and the leaves turn shades of bright yellows, reds, and browns.

  • Sweet Potatoes: I like to use a Red Garnet sweet potato.
  • Ground Sage Sausage: Any ground breakfast sausage will work. I love to use a sage-flavored sausage if I can find one (Jimmy Dean has a sage sausage that works great for this recipe).
  • Olive OilOrganic cold pressed extra virgin olive oil.
  • Yellow Onion: You can use other onions, but I love the yellow onion the best for this recipe.
  • Apple: Gravensteins or Granny Smith
  • Sea Salt and Pepper: Salt and pepper really make this dish for me. Without them, it falls flat! I didn’t put a measurement on them because it’s subjective. Season to taste.
  • Fresh Sage Leaves: If you have fresh sage from the garden, toss a few in at the end, it adds a wonderful flavor. (If you don’t have any, that’s okay, it will still be a great dish.)

How to Make Sweet Potato, Sausage, Apple Hash

  1. Dice your onion then chop your sweet potatoes and apple into small cubes. Set these prepared ingredients off to the side.
  2. Heat your cast iron pan and drizzle with olive oil.
  3. Add chopped onions and sausage. Cook until the sausage is lightly browned.
  4. Next, add sweet potato chunks and let cook for about 15 mins before adding the apple pieces.
  5. Cook until the potato and apple chunks are soft.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh sage leaves.
  8. Serve hot and enjoy.

Ingredients

  • 1 TBS olive oil
  • 1 pound of sage sausage (ground)
  • 1 medium yellow onion
  • 3 sweet potatoes
  • 1 large apple
  • salt and pepper to taste
  • fresh sage leaves

Instructions

1. Dice your onion then chop your sweet potatoes and apple into small cubes. Set these prepared ingredients off to the side.

Notes

  • This recipe calls for sage sausage but you can use any other pork sausage and get the same great results, just without the extra sage flavor.
  • Salt and pepper really make this dish. Without them, it falls flat! I didn't put a measurement on these because it's subjective. Season to taste.
  • You can make this ahead. To heat back up, put into a oven-sage pan and cover with foil. Heat at 350 degrees for about 20 mins.
