Paleo Thumbprint Cookies with Blackberry Chia Seed Jam

I’ve been a little MIA as of late. Mostly taking advantage of all the summer fun to be had. We’ve had swim lessons, trips to see family, projects, homeschool prep, and of course berry picking!

We’ve been anxiously awaiting blackberry season and it has finally arrived! These amazing, juicy morsels are everywhere: in backyards, on the side of the road, and on walking trails all over our area (talk about God’s grocery store)!

When we lived on the East Coast, a pint of Blackberries would cost upwards to six dollars a pint! I could never bring myself to pay that much. However, now that we are back home, we are enjoying all the free berries our hands can pick!

Having an abundance of these berries, I’ve been playing around with some recipes and I had to share this one with you:  Paleo Thumbprint Cookies with Blackberry Chia Seed Jam.

The combination of the soft Thumbprint cookie and the sweet berry goodness is a delectable match made in heaven. 

Paleo Thumbprint Cookies

  1. Preheat the oven to 350 and line a cookie sheet with parchment paper.
  2. In a medium bowl, mix together the butter, egg, vanilla, and sweeteners until fluffy.
  3. Add the remaining dry ingredients and mix well.
  4. Let the dough sit for about 10 mins while the coconut flour absorbs the liquid.
  5. Gently roll the dough into 1″ balls and place them 2″ apart on the lined cookie sheet. (The dough will feel a little wet but that is ok.)
  6. Use your thumb or a spoon and make an indent in the middle of each cookie.
  7. Fill the indention with a small amount of Blackberry Chia Seed Jam.
  8. Bake for 8-12 minutes or until they start to turn golden brown. Remove and place on a wire rack to cool.[/recipe]
